Moja

Re-wetting cured or fermented leaf, usually by spraying or dipping in water, to bring it back to a workable and fermentable moisture level. The Spanish verb mojar means to wet, and the noun names both the act and the water used.

Moisture is the fuel for fermentation and the difference between pliable leaf and leaf that shatters, so mojas are timed carefully at every stage from barn to rolling table.
