Turning the Pilon

Dismantling a fermenting stack and rebuilding it inside out, so leaf from the hot core moves to the cool outside and vice versa. Turning happens whenever the pile reaches its target temperature, which can be every few days early on and less often as activity slows.

Turning is what makes fermentation even across thousands of leaves; a pile left unturned ferments its center to ruin while the outer leaves barely change.
