Definition
The main factory fermentation, carried out after destemming and initial sorting, in larger pilones and over a much longer span, commonly several weeks to several months with repeated turnings. Target temperatures are set by leaf class rather than by a single rule.
Why it matters
This is where most of the flavor development happens, and the length a factory is willing to fund is one of the clearest dividing lines between cheap and serious cigars.
